Wine: Grappa di Vernaccia | Grappa di Vernaccia.
Cellar: Azienda vinicola Contini Attilio
Discover the exquisite Grappa made from Vernaccia grapes at Contini Winery. This unique spirit is crafted solely from the pomace of Vernaccia di Oristano DOC grapes, sourced from the traditional production area in the low valley of the river Tirso, located in northern Campidano.
The pomace undergoes a meticulous fermentation process in special airtight containers with controlled temperatures right after pressing. This ensures optimal conditions for alcoholic fermentation, resulting in fragrant and fruity aromas characteristic of white grapes, achieved through air-free environment.
The subsequent distillation of the pomace occurs slowly and intermittently in traditional copper stills at the “Artisan Distillery Bonollo” in Greve in Chianti (MO). The resulting product is then left to mature for approximately ten months in stainless steel containers. The Grappa boasts an intense, distinctive aroma with a rightfully penetrating essence, offering a full-bodied, dry, and typical flavor profile.
