Rocca Rubia Red Wine: A Controlled Designation of Origin red wine, crafted from Carignano grapes.
Vineyards: The vineyards are cultivated using the ancient bush-trained method (known as vigna latina), located on the coast in lower Sulcis.
Winemaking Process: After destemming and crushing, the grapes undergo fermentation and maceration for 12-14 days in stainless steel tanks at a controlled temperature of 25-28°C. Frequent pump-overs during this period enhance the extraction of noble tannins inherent in Carignano grapes.
Aging: Following malolactic fermentation, the wine is transferred to small French oak barrels of fine grain for 10-12 months. This aging process allows for biochemical, physicochemical, and organoleptic evolution. Subsequent bottle aging for a few months further enhances the wine’s bouquet.
Tasting Notes: Rocca Rubia boasts a deep ruby red color with intense fruity aromas of blackberries, blueberries, vanilla, myrtle, leather, and licorice. On the palate, it is broad, velvety, and full-bodied with great structure and aromatic persistence.
Pairing: This wine pairs excellently with red meat dishes, wild boar, roasted suckling pig, and well-aged Sardinian pecorino cheese.
Serving: Serve at a temperature of 18°C to fully appreciate its flavors and aromas.
