Simplicius White Wine: Simplicius is a white wine dedicated to the patron saint of Gallura, created in close collaboration with the Diocese of Tempio-Ampurias as a wine for the Holy Mass. Produced in accordance with Canon Law and under the supervision of the Diocese of Tempio-Ampurias.
The production of Simplicious was authorized on September 1st, 2010, by a Episcopal Decree from Monsignor Sebastiano Sanguinetti.
Simplicius is vinified traditionally with skin contact fermentation for about 3 days, followed by racking, pressing, and barrel fermentation for at least 20 days. The wine is then aged in the cellar for at least 10 months.
It has a golden yellow color, a broad and complex nose with pleasant hints of ripe fruit, honey, and citrus. It has a long finish with a subtle almond note.
On the palate, it is pleasantly sweet with good freshness and softness, full-bodied, balanced, and delicate. It has a good retro-olfactory persistence.
- Pairing: Ideal with almond paste desserts, dried fruits, also great with fresh cheeses.
- Recommended serving temperature: 12°C in small glasses to enhance aroma development and concentration in the nose.
