Dolia Vermentino di Sardegna | Vermentino di Sardegna DOC

Dolia Vermentino is a Vermentino wine from Sardinia DOC, made from the homonymous grape variety grown in the vineyards surrounding the Dolianova Winery.

After a meticulous selection, the grapes undergo destemming followed by gentle pressing. The obtained must is clarified through static cold decantation, and the clean fraction is inoculated with selected yeasts. Fermentation takes place at a temperature of 14-16°C for about fourteen days. Once fermentation is completed, the wine remains in contact with its noble lees, which are stirred for about a month before being bottled early to preserve its freshness.

This wine has a pale straw yellow color with greenish reflections. It boasts an intense, fresh, and fruity bouquet with hints of apple. On the palate, it is intense and persistent, slightly acidic with a delicate and characteristic bitter vein on the finish.
