Discover Dolia Monica Red Wine from Sardinia DOC
Dolia Monica is a unique red wine originating from the Monica grape variety in Sardinia DOC. It is carefully crafted using indigenous red berries.
The grapes undergo meticulous selection, followed by destemming and gentle pressing. The extracted must is clarified through cold static decantation, then inoculated with selected yeasts. Fermentation takes place at a temperature of 14-16°C for approximately fourteen days. After fermentation, the wine ages on its fine lees for about a month before being bottled early to preserve its freshness.
This intense ruby-colored wine with violet reflections evolves towards amaranth as it ages. It boasts an intense and persistent aroma, ethereal and vinous, with hints of raspberry and cherry. On the palate, it delivers warmth, balanced tannins, and a persistent finish with a delicate herbal undertone.
Best enjoyed young, Dolia Monica pairs perfectly with dry soups, risottos, lean meats, and medium-aged cheeses.
