Karabadis Red Wine: Discover the essence of Sardinian wine with Karabadis, a pure Nebbiolo red wine from the vineyards near the Gallurese village of Luris, in Sardinia.
The Karabadis vineyards are cultivated using a trellis training system and pruned using spur pruning on granitic decomposing soils with basalt and other effusive rocks, slightly sandy in texture.
After a strictly manual harvest, the grapes are quickly brought to the nearby cellar for vinification. The grapes are destemmed, crushed, and left to ferment at a controlled temperature between 25 and 28°C using selected yeasts. The maceration process lasts for about two weeks. After racking, the wine is freed from coarse lees and undergoes malolactic fermentation. Following one year of aging in oak barrels, the wine is cold filtered and bottled. The bottles are stored in the cellar for approximately 6-8 months before being released for sale.
Luris Red Wine: A wine of remarkable structure, Luris displays a ruby red color with garnet reflections. Its complex bouquet offers fruity and floral sensations, including wild berries, raspberry jam, rose, and violet. On the palate, it is dry, warm, harmonious with a pleasantly tannic persistence.
- Pairing: Ideal with hearty meat dishes ranging from roasted veal or lamb to kid goat. Also pairs well with aged cheeses.
- Serving Recommendation: Serve at a temperature of 16-18°C for optimal enjoyment.
