Thesys Red Wine: A jewel from the Isola dei Nuraghi IGT, Thesys is crafted from a blend of Bovale and Syrah grapes sourced from vineyards in Uras. The Bovale vines are grown in the traditional bush style, while the Syrah vines are trained using the low espalier method.
The Terroir:
- Bovale grapes thrive in white sandy soils near the sea at 9 meters above sea level.
- Syrah grapes flourish in clayey-schist hillside terrains at 260 meters above sea level.
Vineyard Details: The Bovale vines are 70 years old, while the Syrah vines are 30 years old, producing around 45 quintals per hectare.
Winemaking Process:
- The grapes are handpicked in the early morning hours.
- Maceration on the skins occurs at controlled temperatures for ten days.
- After alcoholic fermentation, malolactic fermentation takes place followed by aging in new oak for 3 months and then additional glass aging for three more months.
Tasting Notes: Thesys presents a deep ruby red color, almost impenetrable. On the nose, it offers an intense vinous aroma with hints of small red fruits, plum jam, and cherries combined with spicy notes of leather, black pepper, and roasted coffee. It has elegant and soft tannins, full-bodied, enveloping, and persistent on the palate.
Food Pairing: Thesys pairs beautifully with grilled or braised red meats, flavorful and spicy pasta dishes, as well as aged cheeses.
Serving Temperature: Serve Thesys at a temperature of 16-18°C to fully appreciate its flavors and aromas.
