Cellar: Tenute Dettori
Dettori Rosso Wine: A unique red wine from the Romangia region, Dettori Rosso is made exclusively from Cannonau grapes, boasting a Geographical Indication. Naming a wine after one’s surname is no easy feat, but Dettori manages to encapsulate the essence of my family’s life.
Winemaking Process: Dettori represents the ancient Cannonau of Sardinia, a wine long forgotten in favor of more mainstream options. Drinking Dettori is akin to delving into cultural anthropology. It requires a late harvest to maintain just the right level of natural acidity without compromising on quality.
Tasting Notes: Best enjoyed at 13-15 °C after proper aeration, allowing its oxidative evolution to unfold. This wine pairs beautifully with aged cheeses and is the perfect companion for moments of quiet contemplation. Like all our wines, Dettori needs time to reveal its true character once opened.
- Glassware: Opt for a large tulip-shaped glass and let the bottle rest after transportation. The unfiltered and unclarified nature of this wine may result in natural sediments.
- Production Process: Harvested by hand and transported in crates inside our refrigerated Fiat 100 Truck, the grapes undergo destemming and ten days of maceration at controlled temperatures. Decanting and maturation take place in small cement tanks until bottling in May/June. No filtering, clarification, or stabilization occurs; each bottle is filled manually before aging in a strictly controlled environment.
