Rosé di Terra e Mare: A delightful rosé wine from the Colli del Limbara IGT, crafted with 60% Carignano and 40% Sangiovese grapes.
The grapes are cultivated in the vineyards of Berchidda in Su Crabileddu, Sardinia, on granitic, sandy soils using traditional Alberello and low espalier cultivation methods, with a yield of 4500 per hectare.
The Mediterranean climate of the region features hot, dry summers and mild, rainy winters.
The manual harvest takes place in early September. The perfectly ripe grapes undergo cold pressing and maceration for 12 hours. Through the saignée method, only the finest juice is selected for rosé production. This juice undergoes static decantation at 2-4°C for 24-36 hours. The clear fraction then ferments at a low temperature of 10-12°C for 30-40 days. The wine rests on its lees until March-April with regular bâtonnage interventions before bottling in May. This meticulous process enhances the original fruit’s fragrances and aromas.
Rosé di Terra e Mare displays a coral color with vibrant “onion skin” reflections.
On the nose, it offers delicate floral notes and intense fruity aromas reminiscent of wild berries, pomegranate, and white peach.
This versatile wine pairs wonderfully with tapas, tempura, charcuterie boards, seafood soups, vegetable stews, and the traditional Gallurese dish “suppa cuata.”
Serve chilled at 8-12°C to enjoy all its flavors to the fullest.
