  • Bianco Smeraldo is an exceptional Vermentino di Gallura Docg Superiore crafted solely from Vermentino grapes.
  • The grapes are harvested from the vineyard located in “Su Crabileddu” (western slope of the estate) with a very low yield per hectare (4500 bottles of 750 ml from one hectare of vineyard).
  • The vineyards grow on granitic decomposing soil and are cultivated with low short spur guyot training system.
  • The harvest starts manually in early September (first week). The grapes undergo cold maceration in a refrigerated cellar (near 0°C) for 24-48 hours. After destemming, the must rests at temperatures close to 0°C for 48-72 hours (skin maceration) before being gently pressed. This extended processing time, lasting about one week compared to the traditional two hours, preserves the fragrance and aromas of the original fruit. The must ferments in stainless steel tanks at controlled temperatures. The wine ages on its fine lees for several months before bottling.

  • Bianco Smeraldo Vermentino di Gallura Docg Superiore displays a straw yellow color with greenish reflections. It offers an elegant nose with mineral notes from granite that deliver a wide range of sensations, including Mediterranean scrubland, golden apple, white peach, yellow broom flowers, and fresh fig. On the palate, it is satisfying and soft with gentle acidity and a dry, sapid finish.

Pairing Recommendations:

  • Perfect as an aperitif or paired with pasta dishes featuring shellfish or vegetable soups. Excellent with Berchiddese bread soup. Ideal for accompanying Catalan-style lobster as well as seafood and crustacean dishes. Enjoyable with fresh goat and cow cheeses.
