Discover Passito Smeraldo Wine
Passito Smeraldo is a unique Isola dei Nuraghi IGT wine made from overripe Moscato and Vermentino grapes, crafted by Gioacchino Sini of Unmaredivino in Berchidda.
The grapes used for this wine come from vineyards located in Sorso (Olbia Tempio) in the Tresmontes region of Sardinia, grown on rocky limestone soil using low espalier and bush cultivation techniques.
On average, around 30 liters of wine are obtained from every hundred kilograms of grapes.
The harvest is done manually during the last week of September. The sun-drenched and windy days allow the grapes to dry on racks while being covered with plastic sheets at night to prevent moisture alteration. The whole grapes are pressed and undergo a short skin maceration before fermenting in stainless steel tanks at controlled temperatures. The wine then ages on its lees for several months before a pre-bottling clarification process. Just before bottling, a portion of Vermentino di Gallura is added.
Passito Smeraldo boasts a warm golden color with citrusy and honeyed aromas.
On the palate, it is long-lasting with notes of fresh fruit and flowers, making it an ideal wine for contemplation. Serve chilled at 6-8 °C for the best experience.
