Located just a short distance of about two kilometers from Sassari, our company is nestled in the picturesque area known as “II Prato Comunale.” This idyllic setting inspired the name of our signature product: “Ancient Olive Groves of Prato.” The region boasts an abundance of olive trees, with 98% being of the prized “Bosana” variety. Situated at an elevation of 250 meters above sea level, our land faces south, ensuring ample sunlight for optimal growth.
The soil in this area is characterized by a clayey composition, with basalt rocks lying just beneath the surface. While this may stress the trees slightly, it results in their impressive height and high-quality yields. Despite not producing a vast quantity, the olives harvested are known for their exceptional quality.
Our olive groves yield an average of 16 to 20 liters per quintal of olives. Through years of dedicated cultivation using an integrated approach, we prioritize natural and rational methods (employing treatments only when necessary). Harvesting is meticulously done either by hand-picking or with the assistance of shaking machines where applicable. We carefully monitor the ripening process, picking the olives when they transition from green to black. To maintain freshness and prevent mold formation, we store them in perforated crates before washing and milling.
At our on-site continuous line mill situated amidst our olive groves, the milling process begins promptly after harvest to preserve product integrity. Utilizing a natural cold-press extraction method with a continuous cycle mill ensures minimal alteration during processing. The extracted oil undergoes settling in specialized stainless steel containers within a nitrogen atmosphere before being transferred for further purification without mechanical intervention. This meticulous process guarantees near-complete elimination of impurities associated with its chemical composition.
The resulting extra virgin olive oil is exceptionally stable over time due to its rich content of monounsaturated fats that promote healthy cholesterol levels (specifically high-density lipoprotein or HDL). Packed with polyunsaturated fatty acids and antioxidants, our olive oil stands out for its purity and nutritional benefits compared to other varieties on the market.
