At our winery, we rely solely on native yeasts to kickstart spontaneous fermentation at natural temperatures. By avoiding filtration or clarification methods, we maintain the pure essence of the wine intact.

For wines aged in oak barrels, we use a minimal amount (3g per hectoliter) of sulfur dioxide, focusing on a grape-centered approach over others. This precise technique results in wines that truly reflect their terroir and grape varieties.
