Bisso is a White Sparkling Wine made using the Classic Method VSQPRD, crafted from Vermentino grapes.
This initial production of 3500 bottles is the result of extensive research into French sparkling wine methodologies and the secrets of various “recipes” not easily understood. What brought us here was primarily a passion for this ancient and fascinating method, along with the belief that it would shine brilliantly when applied to Vermentino grapes. Our process followed the purest principles of this method: its lengthy aging softened the rough edges of Vermentino and elevated its qualities; bottle refermentation and slow riddling enhanced its aromas and tones, born first from nature and then from man.
The sensations experienced upon seeing its golden color and initial foam were akin to creating a product as refined and ethereal as a precious fabric. Its name stems from this and a deep love for our land, Sardinia, with its ancient and magical traditions. One such tradition is the crafting of bisso: the silk of the sea.
