Indulge in the exquisite taste of Cannonau Riserva di Olianas, a remarkable red wine crafted from pure Cannonau grapes in Sardegna DOC.
The Vineyard:
- Located in the Vigneto Ruina Figu, the vines thrive in limestone-rich soils with a Franco-Argillaceous texture.
- An area of one and a half hectares was planted in 2002, facing south/west and cultivated using the guyot method.
- The vineyard boasts a density of 5600 vines per hectare, yielding 1kg of grapes per vine.
The Winemaking Process:
- The grapes are meticulously handpicked in early October, undergoing double selection to ensure only the finest fruit is used.
- After gentle destemming and pressing, the juice ferments in buried terracotta amphorae of 10 Hl capacity using the BIOINTEGRAL method.
- No selected yeasts or enzymes are added during fermentation, allowing for a natural process to unfold over a maceration period of 35 days.
Aging and Tasting Notes:
- The wine matures in French and Slavonian oak barrels ranging from 10 to 20 Hl for approximately 22 months before resting for at least five months in bottles.
- Cannonau Riserva delights with intense aromas of red berries, hints of myrtle, and cocoa on the nose.
- On the palate, it reveals a robust yet velvety texture with well-rounded tannins and a pleasant acidity balance. The finish lingers with slightly sweet notes and balsamic hints supported by a delightful savoriness.
Pairing Recommendations:
This powerful and structured wine complements dishes featuring red meats, game meats, and aged cheeses. Try it with lamb chops or roasted suckling pig infused with myrtle flavors for an unforgettable dining experience.
Serving Suggestion:
