Discover Cannonau Wine from Sardinia
Indulge in the rich flavors of Cannonau, a red wine with Controlled Designation of Origin, Cannonau di Sardegna. Crafted from 95% Cannonau grapes and 5% Tintillu, this wine is a true delight for wine enthusiasts.
- The Sedda Sa Figu vineyard boasts sandy soils that impart elegance and freshness to the wine.
- In the Anfiteatro Vineyard, located in a south-facing valley with clayey soils, gentle winds bring complexity, fruitiness, and structure to the wine.
Planted between 2002 and 2005, this vineyard is cultivated using Guyot training systems across 12 hectares of land. With a density of 5600 plants per hectare and a yield of approximately 1.5 kg of grapes per vine, quality is paramount in every bottle.
The harvesting process is meticulously done by hand and collected in crates for optimum preservation.
Winemaking Process:
- Grapes are destemmed and lightly crushed to extract the juice.
- 30% of the resulting must undergoes fermentation in 1000-liter buried amphorae for 20-25 days, enhancing maceration on the skins. The remaining 70% ferments in temperature-controlled stainless steel tanks using natural yeasts without added enzymes.
- Malolactic fermentation and aging occur partially in second and third-passage French oak barrels and partly in steel tanks for around 8 months. Minimal sulfites are added before bottling to maintain the wine’s natural integrity.
Cannonau wine showcases prominent flavors of mixed berries intertwined with hints of dark chocolate and tobacco. Its gentle tannins on the palate are complemented by well-balanced acidity, offering a delightful sensory experience.
This youthful, fresh, round, and lively wine pairs perfectly with appetizers and first courses. Serve it at around 18°C in winter or 16°C in summer to fully appreciate its distinct characteristics within five years of vintage.
