Chelos | Vino Spumante Brut

Chelos is a Sparkling Wine Cuvée Brut Reserve obtained with the Charmat Method from 65% Chardonnay grapes and the remaining part from Vermentino di Sardegna.

The wine is produced in the Avisiane Hills in the Cembra Valley in Trentino.

The vineyards grow on structured, clayey, deep soil rich in stones, trained with a simple pergola system with a planting density of 5000 vines per hectare.

The grapes are harvested by hand during the first decade of September, then brought to the cellar as quickly as possible.

Winemaking:

  • Gentle pressing of the grapes
  • Static settling of the musts
  • Fermentation at controlled temperature in stainless steel tanks
  • Aging on lees for about 3 months
  • 10 months aging on yeast after refermentation

It is recommended to serve at a temperature of 6-8°C.
