The Monili Bianco is a Vermentino wine from Sardegna DOC, made exclusively from Vermentino grapes grown on granitic soil using espalier cultivation.
The harvest usually takes place starting from the first decade of October, with each hectare yielding an average of 90 quintals of grapes for 63 hectoliters of wine.
The grapes brought to the cellar undergo immediate pressing, destemming, and crushing, followed by racking of the must which is then started clean fermentation; followed by several rackings until the aging period in stainless steel tanks for at least 3 months.
The Monili is a Vermentino with a pale straw yellow color, a floral aroma, and remarkable persistence. On the palate, it is soft, fresh, and mineral.
Excellent paired with seafood appetizers, raw dishes, and seafood cuisine.
Serve at a temperature of 10-12°C.
