Moro Sardo from Cantina di Mogoro is a red wine made from pure Cannonau grapes grown in the calcareous-clayey soils surrounding Mogoro.
Prior to harvesting, usually around the last decade of September, the Cannonau grapes for this Sardinian DOC wine ripen in a perfect climate with mild winters and hot summers.
The winemaking process involves a fermentative maceration of about 10 days at a temperature of 24°C. This allows for the expression of a large amount of fermentative scents that enhance its typical fruity character. It then matures on fine lees for approximately 2 months followed by another 3 months in steel.
It appears ruby red with garnet reflections. On the nose, it is complex and delicate, with floral aromas hinting at rose and violet, red fruit, and hints of aromatic herbs. On the palate, it is savory and round, fruity and fresh due to good acidity.
Great as an aperitif or paired with simple pasta dishes, savory pies, semi-aged sheep or cow cheeses, and grilled vegetables.
