Discover Sincaru Riserva: A Cannonau di Sardegna DOC red wine, crafted solely from Cannonau grapes by the renowned Surrau winery in Arzachena.
The Winemaking Process:
- The perfectly ripe grapes are handpicked and carefully brought to the cellar for destemming and crushing before being sent to Slavonian oak fermentation tanks.
- The alcoholic fermentation lasts around 15 days at controlled temperatures below 28°C, utilizing frequent punch-downs for optimal extraction.
- Extended post-fermentation maceration follows for an additional 15-20 days under submerged cap conditions. After racking, the wine undergoes malolactic fermentation at 18°C.
Aging and Bottling:
- The wine then matures in medium-capacity Slavonian oak barrels (30 HL) for a minimum of 12 months before bottling decisions are made based on tastings.
- Prior to bottling, the wine rests in small concrete tanks for several months, then transferred to bottles for a further six months at a constant temperature of approximately 15°C.
Tasting Notes: Savor Sincaru Riserva Cannonau di Sardegna DOC’s ruby-red hue with hints of garnet. On the nose, enjoy intense aromas of sour cherry with spicy undertones reminiscent of the Mediterranean scrubland. The palate offers a soft, warm, full-bodied, velvety, and enveloping experience.
