When it comes to olive oil, the term “Extra Virgin Olive Oil” refers to the oil obtained from the first pressing of olives using mechanical processes, without the use of chemicals. It is produced under conditions that do not alter the oil and with a free acidity level, expressed as oleic acid, not exceeding 1%. Only fresh olives of top quality are used, harvested and pressed without undergoing any treatment other than washing, leaf separation, centrifugation, and filtration.
