When it comes to olive oil, “Extra Virgin Olive Oil” is defined as the oil extracted from the first pressing of olives through mechanical processes, without the use of any chemical substances. This ensures that the oil remains unaltered and has a free acidity level, expressed in oleic acid, of no more than 1%. Only fresh olives of high quality are carefully picked and pressed, without undergoing any treatment other than washing, leaf separation, centrifugation, and filtration.
