Birbante Extra Dry: A Sparkling Vermentino wine from Sardegna DOC, made from Vermentino grapes and produced in 13,500 bottles.
Vineyards: Located in the Sorso Municipality on sandy-clay soil trained with spurred cordon. Grape harvesting usually takes place in the first ten days of August.
Winemaking:
- Whole cluster pressing with cold static settling.
- Sparkling process using the Charmat method.
- Fermentation occurs under reduction at a controlled temperature of 12°C.
- Slow foam taking with selected yeast inoculation.
- Aged in autoclave in contact with yeast while stirring for 45 days.
Tasting Notes:
- Appearance: Pale yellow color with greenish reflections, fine perlage, and a delicate yet persistent crown.
- Nose: Delicate start with hints of fresh yellow fruits, white flowers, and a touch of Mediterranean scrubland on the finish.
- Palate: Smooth and soft on the palate, confirming the fruity notes with a savory finish of good persistence. Well-balanced by a natural softness derived from prolonged yeast contact.
