Abal’abà is a white wine from Sardinia, specifically from the Isola dei Nuraghi IGT, made from white grapes grown in the Gallura region.
The 42-year-old vineyards thrive on granitic soil, adding unique characteristics to the wine.
Winemaking Process of Abal’abà
- Carefully selected grapes are handpicked and placed in crates.
- After destemming, the obtained must ferments with the skins for 15 days at a controlled temperature of 20°C until all sugars are consumed.
- The wine is then pressed and aged in 500-liter tonneaux on lees where malolactic fermentation takes place.
Aging of Abal’abà
- The wine ages in Austrian oak tonneaux for 21 months with regular bâtonnage.
- A week before bottling, it is transferred to steel tanks for clarification and filtration-free resting. The wine further matures for 2 months in bottles before release.
