The Vineyards and Production Process
- Located in Sorso (SS) at an altitude of 70 meters above sea level, the vineyards thrive on sandy soil with a moderate presence of gravel. The vines are meticulously pruned to spur cordon training, resulting in a yield of 25 quintals per hectare and 5681 vines per hectare.
- The harvesting is done by hand in crates during the second decade of October. The grapes undergo cluster selection, gentle destemming, berry selection, cold pre-fermentation maceration, fermentation at 26°C, and nearly 30 days of skin maceration. The wine matures in French Barriques for 24 months followed by almost a year in the bottle.
