When it comes to olive oil, the term “Extra Virgin Olive Oil” refers to the oil extracted from the first pressing of olives through mechanical processes, without the use of any chemical substances or treatments. It is essential that the extraction conditions do not alter the oil and that its free acidity, expressed as oleic acid, does not exceed 1%.

Only fresh olives of the highest quality are used for this process. These olives are carefully harvested and pressed without undergoing any other treatment apart from washing, leaf removal, centrifugation, and filtration.
