When it comes to olive oil, the term “Extra Virgin Olive Oil” refers to the oil obtained from the first pressing of olives using mechanical processes, without the use of any chemical substances. It is crucial that the conditions under which this oil is produced do not lead to any alterations in the final product. The free acidity level, expressed as oleic acid, should not exceed 1%.
Only fresh olives of top quality are selected for this process. These olives are carefully picked and pressed without undergoing any additional treatments apart from washing, leaf removal, centrifugation, and filtration.
