Hassan Passito: A Unique Red Passito Wine from Isola dei Nuraghi IGT
The vineyards where the Hassan Passito is born are located in Sorso, on sandy soils with a decent presence of stones at an altitude of 70 meters above sea level. The vines are grown using the cordon spur method, with a planting density of 5861 vines per hectare, yielding 50 quintals per hectare at harvest, 25 quintals per hectare after drying, and 10 quintals per hectare of wine after aging in wood. The drying period lasts for about 5 months.
The grapes are harvested during the second/third decade of October and carefully placed in small crates in a single layer. Once in the cellar, they undergo gentle pressing without destemming and then ferment at low temperatures in stainless steel and wood tanks. The wine then matures in small French oak barrels for nearly 2 years before finishing its aging process in the bottle for approximately 6 months.
With a golden color and noticeable amber reflections, Hassan Passito offers a captivating aroma of honey, apricot, pineapple, and hints of spices. Its velvety smoothness on the palate provides a delightful taste balance that lingers long and intoxicatingly with each sip.
